Place the gluten free oats, chia seeds, Greek yogurt, honey (or if preferred you can switch this to maple syrup or granulated sweetener. If you choose sweetener, add 15ml more milk), cocoa powder and peanut butter in a bowl.

Mix together with a spoon until well combined to create the base of your gluten free oats.

Completely optional, but I like to blend mine as I don't like chunky oats so I use a stick blender to make it slightly smoother, it doesn't go completely smooth and that's not my aim but it just takes the chunkiness off. You can leave it as is and have chunky gluten free oats, it is completely your choice.

Pour the mix into a mason jar (or a bowl and cover with cling film), I like to top mine with frozen cherries so they defrost overnight but you can top with any fruit you like or even something like pistachios and raspberries. Leave in the fridge overnight, it needs at least 8 hours for the chia seeds and gluten free oats to absorb the liquid and soften.
