Gluten Free Loaded All Day Breakfast French Toast Fries

I love something a bit different and this amazing breakfast one was inspired by a lovely lady on Instagram (whatiateforbreakfast). I love French toast and loaded French toast sounds like an absolute dream. I used Promise gluten free bread for the French toast and then loaded with all things all day breakfast. It is super filling and absolutely delicious. It does require a bit of multitasking, it pretty easy to make, it could also be made dairy free by switching the milk for a dairy free alternative!

Gluten Free Loaded All Day Breakfast French Toast Fries

Ingredients

2 slices gluten free bread (I used Promise gluten free bread)
2 eggs
1tbsp milk
30g cheddar cheese
2 rashers bacon
2-3 mushrooms
1 200g can baked beans (although you can half this is you don't want it quite so loaded!)
1/2tsp chives (optional)

Method

  1. Beat 1 egg with the milk in a jug and pour onto a small plate.

  2. Cut the bread into chunky strips/fingers and dip each in the egg mix on either side.

  3. Heat a frying pan with a little cooking spray or oil and add the bread fingers, sprinkle over about 1/4 of the cheese onto the uncooked side of fingers to give a cheesy touch. Cook for about 2-3 mins then flip them over to cook the top side.

  4. While the French toast fingers are cooking, chop your bacon and mushroom into pieces and throw into another frying pan, stir occasionally until the bacon is cooked through and mushrooms soft.

  5. Once the fingers are cooked place on a plate and keep warm.

  6. Pour the beans into a pan and heat on the hob or alternatively pour into a mug and heat in the microwave for a couple of minutes.

  7. While the beans are heating fry an egg until just cooked.

  8. Pour the beans over the French toast fingers, top with the bacon and mushrooms, sprinkle over remaining cheese then finish off with the fried egg and add a few chives if you like. Serve hot!
