Gluten and Dairy Free Overnight Coconut and Mango Oats

Simple cold gluten and dairy free oat recipe, left in the fridge overnight, the oats absorb the milk for a delicious creamy breakfast. I love making these the night before a busy day for a quick and easy breakfast. You could also make this recipe vegan if desired, just switch the honey for maple syrup. If you are a coeliac that can't tolerate gluten free oats you could switch to rice flakes, they will absorb the milk in the same way.

Ingredients

40g gluten free oats
150ml coconut milk
3tsp desiccated coconut
1tbsp honey
1/4 fresh mango
  • Preparation Time: 5 Mins
  • Cooking Time: 8 Hours
  • This recipe makes 1 serving

Method

1. Place the oats in a glass or bowl along with around 2tsp of the desiccated coconut.

2. Pour in the coconut milk and honey and mix well. Cover with cling film and place in the fridge overnight.

3. The following morning, mix then topped with chopped fresh mango and any remaining desiccated coconut. Drizzle with a little more honey if desired.
