This gluten free cheesy pumpkin pasta is a creamy, comforting autumn dish made with roasted pumpkin, mature cheddar and a rich cheese sauce. Topped with sweet roasted pumpkin pieces, it's an easy gluten free pasta recipe that's perfect for a cosy lunch or dinner and great for getting some hidden veg into the kids.

If you're looking for a comforting gluten free pasta recipe with a seasonal twist, this gluten free cheesy pumpkin pasta is just the thing! Made with roasted pumpkin, mature cheddar and a creamy homemade cheese sauce, it's a deliciously cheesy dinner that's perfect for autumn. In this recipe I use gluten free penne but you can use any gluten free pasta, gluten free macaroni of course works really well too, an easy gluten free pumpkin macaroni cheese really!

Roasting the pumpkin brings out its natural sweetness and gives it a much deeper flavour than boiling which is why I roast the pumpkin in this recipe, plus having some roasted pieces on top gives a bit more texture. Blended into the cheese sauce, it creates a lovely creamy texture that works brilliantly with mature cheddar. If you want to get hidden veg in the kids, this works a treat, just leave the pumpkin pieces of the top and they won't even know it is in there. You could also make my butternut squash cake with any left over pumpkin, both work interchangeably - another quick vegetable win!

This cheesy pumpkin pasta is similar to gluten free mac and cheese, but with the added goodness of pumpkin. It's made using simple ingredients, including gluten free pasta, butter, milk, flour and cheese, so you don't need anything fancy to make it, apart from the pumpkin everything is likely to already be in your cupboard or fridge. And if it isn't the time of year for pumpkins you can always use butternut squash instead or buy canned pumpkin puree.

The recipe serves three people, making it ideal for a family meal or for preparing a couple of portions to enjoy later. Just remember to keep an eye on your gluten free pasta while it cooks, there's a fine line between perfectly al dente and a pan of mush and there is about 2 seconds between the two with gluten free pasta!

Top Tips

  • Mature cheddar works best but you can use any type of cheese you like, they will just give different cheesy flavours.
  • Feel free to add some sage in for even more flavour boost.
  • Roasting pumpkin gives the best flavour but you can boil if you prefer.
  • Grate your own cheese, pre-grated is usually coated in potato starch which can then overthicken the sauce and prevent the cheese from melting properly too.

Yes! Use 150g of plain pumpkin purée in the cheese sauce. Avoid pumpkin pie filling, which may contain added sugar and spices.

Roasting is recommended because it gives the pumpkin a deeper, sweeter flavour. Boiled pumpkin can work, but the sauce may taste less rich.

You can roast and purée the pumpkin ahead of time and refrigerate it until needed. The pasta is best freshly made, as gluten free pasta can soften when left sitting in sauce.

The recipe as written contains butter, milk and cheddar. You could experiment with dairy-free alternatives, including a plant-based butter, milk and cheese, but the flavour and texture may differ.

Method

  1. Cut the pumpkin in half and scoop out the seeds with a spoon. You can save the seeds to use in homemade autumn granola if you like! Peel the pumpkin (I find this easier once it's cut in half), then chop the flesh into chunks. A small to medium £1 pumpkin should give you around 1kg of pumpkin flesh but it will vary depending on the size.

2.Spread the pumpkin chunks across a baking tray, working in batches if needed. Roast at gas mark 7/220c for around 40 minutes, or until the pumpkin is soft and starting to brown around the edges. Roasting rather than boiling brings out a much deeper, sweeter flavour, making it perfect for this recipe.

  1. Once roasted, transfer around three-quarters of the pumpkin chunks to a blender with approximately 1 tablespoon of water. Blend until thick and completely smooth, adding a tiny splash more water if needed. If you don't have a food blender, a hand blender will work just as well, although it may take a little longer to get a completely smooth puree. Set aside until ready to use.

The steps above are for preparing a whole pumpkin, but you don't need to make it all unless you want to. I only pureed half of my pumpkin so I could save the remaining roasted chunks both for the top of my pasta and for other pumpkin recipes. For this recipe you'll only need around a quarter of a small to medium pumpkin to make enough puree and chunks for the top.

If you decide to puree the whole pumpkin, you can freeze any leftovers in portions to use another time. Alternatively, put your homemade puree to good use in other recipes, such as pumpkin pie, pumpkin spice overnight oats or a creamy pumpkin pasta!

  1. Bring a saucepan of water to the boil and cook your gluten free pasta as per the instructions until al dente. You can use whatever pasta type to like, I used penne as that's the type I usually have in but gluten free macaroni would also be good. I always go al dente when cooking gluten free pasta because you can guarantee 2 seconds to long and it's mush.

  2. Once the gluten free pasta is cooked, drain off the water and set aside.

  3. In a saucepan, melt the butter over a low heat then add in gluten free flour, mix with a wooden spoon to make a roux. It should start to resemble greasy balls of dough. Slowly add the milk while continuously stirring otherwise it will go lumpy and we don't want a lumpy sauce! Keep stirring until the sauce thickens, this will take up to 5 mins.

  4. Once your white sauce has thickened add the grated cheese, stir until melted then add in 150g of pumpkin puree, stir though and add salt to taste. Mature cheddar works best due to its strong flavour but you can use other types.

  5. Chuck the cooked gluten free pasta into the sauce and stir though, ensuring all the pasta coated. Serve up and then add some of the left over roasted pumpkin to the top before tucking in.
