Gluten Free Berry Quinoa

By now you should know I love quinoa. I don't only love it in savoury dishes though, I love it most at breakfast in place of porridge. When cooked in milk of any time it turns into a naturally gluten free beautiful creamy dish with an almost nutty flavour (even more so if you use nut milks!). It's a gorgeous way to start the day.

Gluten Free Berry Quinoa

Method

  1. Place the quinoa in a pan with the coconut milk, water and cinnamon, cook on a low heat until all the liquid is absorbed and the quinoa has "popped" (has a ring round the outside).

  2. Serve with yogurt and berries of your choice, drizzle over syrup or honey.
