Gluten and Dairy Free Peanut Butter Cup Style Overnight Oats

Peanut butter and chocolate overnight oats, a creamy and indulgent gluten free and vegan breakfast option that, for convenience, you can make the night before - you don't have to make this vegan, feel free to use regular yogurt and chocolate if you prefer, however the almond milk works well to intensify the nutty flavour. If you can't tolerate gluten free oats, why not try this with buckwheat flakes instead.

Gluten and Dairy Free Peanut Butter Cup Style Overnight Oats

Ingredients

40g gluten free oats
125ml unsweetened almond milk
40g plain soya yogurt
1.5tbsp crunchy peanut butter
1/2tsp vanilla extract
1tbsp maple syrup
30g dairy free choc chips or chopped chocolate

Method

  1. Place the oats in a jar or dish and mix with all but the chocolate chips. Cover and put in the fridge overnight.

  2. The oat mix should have thickened over night. Melt the chocolate in a microwave (heat in 30 second blasts, stirring between blasts, until fully melted). Dollop and spread on top of the oats and return to the fridge for 10 mins to set.
