Gluten Free Triple Chocolate Granola

Gluten free chocolate granola used to be a popular breakfast product however it has become increasingly hard to find. Granola is super simple to make yourself and can be tailored to your tastes too. If you can't have gluten free oats feel free to switch to rice flakes, from past makings of granola is works to same, or go extra nutty and replace with all kinds of nuts. Don't like the seeds or nuts I've used? Switch them to others, you can really make this your own. Even make it dairy free by chopping up dairy free chocolate into chunks instead.

Gluten Free Triple Chocolate Granola

Ingredients

1tbsp oil
150ml maple syrup
1tbsp honey
1tsp vanilla extract
300g gluten free oats (or switch to rice flakes if you wish)
4tbsp cocoa powder
75g flaked almonds
75g pecans
40g sunflower seeds
25g sesame seeds
20g chia seeds
100g milk chocolate chips
75g white chocolate chips

Method

  1. In a jug mix together the oil, maple syrup, honey and vanilla then set aside.

  2. In a large mixing bowl place all the dry ingredients (you can crush the pecans slightly first if you want so they aren't as big chunks) except the milk and white chocolate chips. Mix together thoroughly.

  3. Pour in the wet mixture and thoroughly mix through until everything is coated.

  4. Grease a baking tray and pour on your granola mix, place in an oven preheated to gas mark 3/180c. Bake for 15 mins then take out of the oven, use a fish slice to flip it all over so you get an even bake then place back in the oven for a further 15 mins.

  5. Once smelling divine, slightly dried out on top and cooked through, remove from the oven and allow to cool on the tray.

  6. When cool, it doesn't need to be completely cold but cool enough that it won't melt the chocolate, pour into a large bowl and add in the chocolate chips, stir through evenly. Store in an airtight container.
