Gluten Free Triple Chocolate Baileys Microwave Brownie

You can't get a brownie quicker to make than this one! This gluten free chocolatey delight takes just 30 seconds to cook and about 2 minutes to mix together! It is deliciously gooey but if you want a more solid brownie just give it a few more seconds! With added Baileys Chocolat Luxe it gives it that little bit of heat, you could of course replace the Baileys with just water to make it alcohol free and it would also be vegan then too!

Ingredients

30g white chocolate chips
1tbsp sunflower oil
1tbsp Baileys Chocolate Luxe (or switch to water if you want to make it alcohol free/dairy free/vegan)
1tbsp cocoa powder
2tsp gluten free self raising flour
2tsp icing sugar
1/6tsp bicarbonate of soda
1/6tsp rice vinegar

Method

1. In a bowl mix together all ingredients thoroughly, or alternatively mix in a mug and you can cook in the same vessel. I found it works best if mixed in a soup bowl or similar then transferred to a ramekin.

2. If mixing in a bowl, grease a ramekin dish and transfer the mix to the dish, if using a mug skip this step.

3. Place the mug/ramekin in a microwave and ping it for literally 30 seconds, you don't need any longer.

4. Once out eat hot straight from the microwave, or let cool and dust with icing sugar!
