Peel and roughly chop the onion and potatoes, peel, chop and deseed the marrow or courgettes. Throw all these vegetables in a large pan.

Add the ginger, stock and tamari sauce to the pan and stir.

Place on the hob over a medium heat and cook for about 30 mins until all the veg has softened.

Once cooked, place in a blender and blitz until smooth. Add a little fat free natural yogurt (or use a vegan alternative if you want to keep the recipe vegan) on top to serve if desired.
