Gluten Free Sweet Potato and Marrow Soup

You can't beat some soup when the weather starts changing, and when you are gifted with a free marrow, you just have to make some. filled with some delicious sweet potatoes and a touch or tamari to give it a kick this soup is full of amazing flavours, gluten free and also vegan.

Ingredients

1 onion
300g sweet potato
150g white potato
400g marrow (or alternatively courgette)
2tsp crushed ginger
900ml vegetable stock
1tbsp tamari sauce

Please note, weights are after peeling.

  • Cooking Time: 30 Mins
  • This recipe makes 4 servings

Method

1. Peel and roughly chop the onion and potatoes, peel, chop and deseed the marrow or courgettes. Throw all these vegetables in a large pan.

2. Add the ginger, stock and tamari sauce to the pan and stir.

3. Place on the hob over a medium heat and cook for about 30 mins until all the veg has softened.

4. Once cooked, place in a blender and blitz until smooth. Add a little fat free natural yogurt (or use a vegan alternative if you want to keep the recipe vegan) on top to serve if desired.
