Mix together sage, parsley lemon zest and crushed garlic cloves in a bowl. You should get something that resembles a thick paste.

Spread the herb mix all over the pork and place in a slow cooker.

In a jug mix together the apple juice with veg stock and then pour over and around the pork. Place the lid on the slow cooker and cook for 4.5-5 hours on high.

When the time is up, remove the pork and slice (if it doesn't fall apart!), pour the apple juice, stock and any juices from the pork into a saucepan and place on a low heat. Add 1tbsp cornflour mixed with a drop of water to the liquid and stir until it thickens. Pour over the pork and serve.
