Gluten Free Salmon with Butter Bean Salad
High in protein, this is a fishy dish which is naturally gluten free with a side of butter beans and pomegranate seeds

Salmon goes well with so many different things. Butter beans mixed with the gentle flavour of cucumber and the sweetness of pomegranate seeds sit perfectly with salmon as a very easy to make salad type side, it is a taste sensation which is naturally gluten and dairy free and a first rate summer time lunch.

Method

  1. Fry the salmon over a medium heat on each side until golden.

  2. While the salmon cooks, heat the butter beans in the microwave for a couple of minutes until hot.

  3. Add the rest of the ingredients to the butter beans and mix well.

  4. Serve along side the salmon, add some boiled rice on the side if you wish
