Gluten Free No Bake Mummy Cookie Bites

A perfect Halloween treat that’s both easy and delicious! Made with gluten free cookies and cream biscuits and a coating of creamy white chocolate, these no bake biscuit bites are simple to make and ideal for Coeliac friendly Halloween parties or fun family bakes. Each little mummy is finished with edible eyes and a drizzle of white chocolate “bandages” for that delightfully spooky look. Rustic, quirky, and irresistibly sweet!

Gluten Free No Bake Mummy Cookie Bites

Ingredients

150g Gluten Free Cookie and Cream Biscuits (most supermarkets have these)
20g butter
50g milk chocolate
150g white chocolate
6 pairs edible eyes

Method

  1. Break the Oreo style gluten free biscuits up into a food processor and blitz into fine crumbs.

  2. Melt the butter and chocolate and pour into the bowl along with the gluten free biscuit crumbs.

  3. Form into balls, roughly walnut size, they don't have to be uniform in shape, it is for them to be a little misshaped, it's adds some quirkiness to the treats. Place on a plate or baking tray. Allow to cool completely so they set, I placed in the fridge for an hour to make sure they were solid.

  4. Melt the white chocolate and dip each ball in, shaking off any excess, they don't need to be neat, the more rustic the better! Add edible eyes (available in most supermarkets around Halloween, double check ingredients to make sure they are safe for Coeliacs) and drizzle over a little more white choc to look a bit like bandages.

  5. Chill in the fridge for at least another hour before tucking in!
