Super quick gluten free Christmas mug cake, made with a few tablespoons of mincemeat

I love a quick and simple mug cake, if you want a Christmassy cake that is super easy and ridiculously quick to make, this gluten free mug cake maybe for you. All done in the microwave, the mincemeat and spice make it proper festive and exceedingly delicious!

Method

  1. Place all ingredients in a mug.

  2. Use a fork on a small whisk to beat the ingredients together, make sure the ingredients are well combined.

  3. Place in a microwave and cook for around 2 minutes, the top should be solid to the touch and not liquid.

I don't understand this, your recipe says 2 tablespoons of mincemeat, which would have 32 grams sugar, according to my jar of Robertson's mincemeat. And 2 tablespoons of golden syrup!! All in one serving? Can you help?

Depends how sweet you want it, for me mincemeat on it's own doesn't make it sweet enough so the golden syrup gives it that extra sweetness, you could try it with just mincemeat and see if it is sweet enough for your tastes. You could also add less golden syrup if you want somewhere in between.
