Mix together all herbs and spices in a bowl until well combined.

Beat the egg and roll the chicken fillet in the egg, then roll in the spice mix, set on a greased baking tray if you wish to bake or set on a plate to deep fry. Repeat with both chicken fillets (or whatever form of chicken you are using). Alternatives you can cut the chicken into chunks to make more of a nugget, process is the same but cut the chicken into chunks first. Allow the chicken to sit for a few minutes so the coating can dry out a little.

If baking, place in a oven on gas mark 5/190c for around 30 mins until golden and cooked through, this way is healthier but the coating is also a lot drier. Best way of cooking is to deep fry, fill a deep pan with oil and heat until spitting, drop one the chicken in the oil and cook for 10-15 mins until golden and cooked through, turning occasionally so both sides go golden. Repeat with any remaining chicken (if you haven't put them all in at once)
