Gluten Free KFC Style Chicken

KFC is one of those notorious ones that even if you didn't like it much before, when you could eat gluten, guaranteed you will end up missing it at some point. It's not easy to get a gluten free recipe that tastes like it, but with a few trials this ended up pretty close especially when fried, but if you want it a bit healthier you can bake it too!

180g gluten free plain flour
2tsp sugar
2tsp sea salt
2tbsp paprika
3tsp onion granules
2tsp mixed spice
2tsp chilli powder
1tsp garlic granules
1tsp black pepper
1tsp sage
1tsp basil
1tsp oregano
1tsp thyme
1/2tsp mustard powder
2 egg
4 chicken breast fillets or other form or chicken such as drumsticks or thighs

Method

  1. Mix together all herbs and spices in a bowl until well combined.

  2. Beat the egg and roll the chicken fillet in the egg, then roll in the spice mix, set on a greased baking tray if you wish to bake or set on a plate to deep fry. Repeat with both chicken fillets (or whatever form of chicken you are using). Alternatives you can cut the chicken into chunks to make more of a nugget, process is the same but cut the chicken into chunks first. Allow the chicken to sit for a few minutes so the coating can dry out a little.

  3. If baking, place in a oven on gas mark 5/190c for around 30 mins until golden and cooked through, this way is healthier but the coating is also a lot drier. Best way of cooking is to deep fry, fill a deep pan with oil and heat until spitting, drop one the chicken in the oil and cook for 10-15 mins until golden and cooked through, turning occasionally so both sides go golden. Repeat with any remaining chicken (if you haven't put them all in at once)

Only Slimming World Friendly if baked, not fried.

Nope. The search continues. How something with so many herbs and spices on it can be so bland is beyond me. Disappointed.

Always been quite spicy when we have made the recipe, could be the spices need tweaking.

Mustard is a gluten free grain, mustard powder is naturally gluten free. The ready made condiment sauce mustard often contains gluten but the grain itself is gluten free.
