Gluten Free Hearty Sausage Soup
Sausage soup packed with hearty beans and veg, a proper filling lunch time especially in cold weather. You can use any sausages for this, just make sure to cook them, but we used Mattesons ready cooked smoked sausage which is gluten free and is found with the cooked meats in supermarkets.
1. Dice the turnip, carrot and onion and place in a pan along with the vegetable stock, allow to boil for 20-30 minutes until all the vegetables are soft.
2. Cut the smoked sausage into chunks and the ham into thick strips and add to the soup.
3. Add in the canned kidney beans and butter beans (you could use fresh but be sure too cook them first) straight after the meat and allow to warm though for 5-10 minutes.
