Gluten Free Cocoa, Nut and Seed Bars

It's not always easy to get hold of a decent cereal bar. When you make them yourself you can and anything into them really, throw in some left over nuts, seeds and fruit and you never know what sort of bar you will get. They are made with gluten free oats but you could use rice flakes if you prefer.

Ingredients

240g gluten free oats (or rice flakes)
100g peanuts
180g coconut oil
210g honey
20g cocoa powder
140g raisins
30g sesame seeds
30g chia seeds
  • Preparation Time: 10 Mins
  • Cooking Time: 25 Mins
  • This recipe makes 16 bars

Method

1. Toast oats and nuts in a frying pan until the oats are lightly browned.

2. In a saucepan, melt the coconut oil with the honey and cocoa powder, once melted pour in oats and nuts and add raisins and seeds then mix well.

3. Press the mix into greased baking tray and bake for 20-25 mins on gas mark 5 until top is well browned.

4. Cool in the tray then cut into pieces, if you cut straight away it will fall to pieces. It will take a good few hours to solidify (we found leaving it over night gave best results), but can can cut while slightly warm, just not while hot.
