It's not just that they have gluten free options, the BIG thing here is that their fryer is exclusively gluten free, and that all the Spanish crispy fried fish and seafood, croquetas and bravas are entirely gluten free and coeliac safe. And they don't put that on the menu because these are as light and crispy and delicious as any glutenous ones I've had in Spain. Better than most in fact!
While the pinchos come on regular bread, they will just as easily prepare them with gluten free bread too. Pretty much everything (except the chicken wings for some reason) is safe.
