Gluten Free Slow Cooker Sausage and Lentil Stew

This gluten free sausage and lentil stew is fabulous when it is cold outside. It is low calorie but super filling and tastes gorgeous. Lentils often cause confusion, most packs you can buy are a may contain gluten however, following Coeliac UK's advise just wash them well and you are good to go!

Ingredients

160g red lentils (Make sure these don't have a may contain warning)
8 sausages (I used Marks and Spencer Skinny Pork Sausages)
2 carrots
1/2 celeriac
1 onion
1 400g can tomatoes
350ml beef stock
  • Preparation Time: 10 Mins
  • Cooking Time: 3 Hours 30 Mins
  • This recipe makes 4

Method

1. Place the sausages in the slow cooker and pour the lentils on top.

2. Peel and dice the carrots, celeriac and onion and add to the slow cooker.

3. Add in a can of tomatoes and the beef stock and mix well.

4. Cook on high for 3 and half hours.

NB: for celery allergy sufferers this recipe doesn't specifically contain celery but does contain celeriac.
