Gluten Free Salmon with Butter Bean Salad

Salmon goes well with so many different things. Butter beans mixed with the gentle flavour of cucumber and the sweetness of pomegranate seeds sit perfectly with salmon as a very easy to make salad type side, it is a taste sensation which is naturally gluten and dairy free and a first rate summer time lunch.

Ingredients

2 salmon fillets
200g butter beans
100g pomegranate seeds
100g cucumber, chopped
6 radishes
1tsp harissa paste
2tsp runny honey
  • Preparation Time: 5 Miins
  • Cooking Time: 15 Mins
  • This recipe makes 2 serving

Method

1. Fry the salmon over a medium heat on each side until golden.

2. While the salmon cooks, heat the butter beans in the microwave for a couple of minutes until hot.

2. Add the rest of the ingredients to the butter beans and mix well.

3. Serve along side the salmon, add some boiled rice on the side if you wish
