Plain Scones - Coeliac Sanctuary

These scones have more of the texture of drop scones, it is a very soft mix but still makes incredible scones, they are even better served with jam and cream! Don't expect to be able to make these like normal scones though, the mixture is a lot thinner and definitely not handleable, but they are delicious scones none the less.

250g Gluten free self raising flour
50g Pure soya spread
1 level tsp Gluten free baking powder
75g caster sugar
1 tsp vanilla extract
150ml light soya milk
Beaten egg for glazing

1. Rub the soya spread into the flour until you get a crumb consistency.
2. Stir in the baking powder and the caster sugar.
3. Beat together the soya milk, vanilla extract and the egg and then stir into the flour mix.
4. Grease a baking tray and drop spoonfuls of the mix onto the tray, should make 8 or 9, brush with beaten egg and then bake in oven for 15-20 minutes on gas mark 5 until cooked.
Soya spread can be replaced with normal margarine and soya milk can be replaced with semi skimmed milk if dairy free is not required
