Kippers Florentine

You really can't beat some fish for breakfast and for me that fish has to be kippers, proper fresh kippers. Kippers pair up beautifully with spinach and eggs, all high in protein to give a proper boost to your morning. It is of course naturally gluten free and makes a delicious change to a fry up or cereal

Ingredients

2 kippers
1 egg
30g spinach
1/2tsp ground cumin

Method

1. Fry or grill kippers for about 4-5 minutes on each side.

2. Meanwhile, crack an egg into a pan of boiling water, leave to poach for about 5 minutes so white is cooked but yolk still runny.

3. In a frying pan, place about 1 tsp of water, place on a medium heat and chuck in the spinach with the cumin, cook the spinach for about 30 seconds until wilted.
