Italian Style Chicken Salad

Come the summer months all you want is a nice refreshing salad, this salad has an Italian twist while being really easy to make, it's one you could serve alongside a barbecue or have for a lunch at work. It is lusciously fruity, protein packed and finished with a tangy lemon dressing which we have made dairy free.

Ingredients

2 handfuls babyleaf salad
70g green grapes
30g cucumber
100g cooked chicken
70g soya plain yogurt (we used plain greek style
1tsp lemon juice
1/2tbsp basil

Method

1. Place the lettuce on a plate and top with the grapes, chopped cucumber and chicken.

2. Make up the dressing by mixing together the plain yogurt, lemon juice and basil.

3. Drizzle over the dressing and serve.
