Place the gammon joint in the middle of the slow cooker.

Dice the peppers, peel and dice the onion and butternut squash (discarding the seeds) and throw into the slow cooker along with the crushed garlic.

Drain the mixed beans and add to the slow cooker along with the canned chopped tomatoes and chicken stock.

Sprinkle in the paprika, oregano, thyme and cayenne pepper. Mix well (as well as you can around the gammon) and cook on high for 7 hours.

Once cooked, remove the gammon from the slow cooker and shred apart using 2 forks. Add it back in and stir well to distribute. Serve!
