Gluten Free Quick Satay Chicken

I love satay chicken, if you love nuts, specifically peanuts, it's one of those you can't help but love. My version is a very quick and simple 10 minute make using ready made chicken and basic ingredients, it's both gluten and dairy free and is great to have with a salad or served with rice.

Ingredients

120g Chicken breast cooked
25g Alpro plain with coconut yogurt,
10g crunchy peanut butter
1tsp mild curry powder
1tsp tamari sauce
1/2tsp sugar or sweetener
  • Preparation Time: 5 Mins
  • Cooking Time: 5 Mins
  • This recipe makes 1 serving

Method

1. Place cooked chicken pieces in a bowl and set aside.

2. Mix all other ingredients together in a bowl, pour into a frying pan and add in the cooked chicken, warm through in the frying pan but keep in moving otherwise the sauce will burn.

3. Serve with either rice or salad or both.

NB: The Alpro plain with coconut yogurt gives a slightly more authentic taste to the sauce however any plain yogurt can be used, either dairy free or none dairy free.
