Gluten Free Millet Bars
A simple alternative to flapjack, these light bars make an excellent gluten free sweet treat or a quick breakfast

Millet flakes aren't the easiest to get hold of, you can buy them online or usually from health shops as an alternative to oats. In these bars they are softer than a flapjack type bar but still have a similar texture. Millet is a naturally gluten free grain and is a rich source of protein, fibre and numerous minerals.

Method

  1. Roughly chop sunflower seeds.

  2. Mash the banana thoroughly in a bowl.

  3. Melt butter and golden syrup in a pan and add the sunflower seeds, banana, millet flakes, oats and sultanas and stir well.

  4. Bake on gas mark 4/180c for around 40 minutes until golden.

If you use lactose free spread it can be dairy free too x
