Millet flakes aren't the easiest to get hold of, you can buy them online or usually from health shops as an alternative to oats. In these bars they are softer than a flapjack type bar but still have a similar texture. Millet is a naturally gluten free grain and is a rich source of protein, fibre and numerous minerals.

Gluten Free Millet Bars

Dairy Free, Low Fat, Nut Free, Vegan

Ingredients

25g sunflower seeds
300g bananas
100g dairy free butter
3tbsp golden syrup
50g millet flakes
100g millet flakes (or gluten free oats if preferred)
100g sultanas

Preparation Time: 15 Mins
Cooking Time: 30 Mins

Method

1. Roughly chop sunflower seeds.

2. Mash the banana thoroughly in a bowl.

3. Melt butter and golden syrup in a pan and add the sunflower seeds, banana, millet flakes, oats and sultanas and stir well.

4. Bake on gas mark 4 for around 40 minutes until golden.

If dairy free is not needed you could use regular butter or margarine
