Gluten Free Melting Moments

Back to all recipes.
A favourite of my other half that he makes frequently and has done for years, they are deliciously crumbly and coated in desiccated coconut. He adapted this recipe from a popular family one so I could have them gluten free. A really easy melt in the mouth biscuit to make that really does melt in the mouth when you bite into the them.

Your Comments

My Mum used to make melting moments when I was a child and I loved them so when I saw this I thought I'd have a go at some GF ones, now I can't eat wheat, etc. The recipe says it makes 24 biscuits but my batch was vast! I made 42 biscuits, slightly bigger than digestive-size so next time I shall definitely use a half quantity! The other thing was that the amount of baking powder on the recipe seemed an awful lot considering I would only usually use 1-2 tsp of it in most other recipes so maybe I'll try it with GF self-raising flour next time and see what what happens. I also thought it seemed like a lot of vanilla extract but you do need that amount for a really good flavour. Finally, for those with electric cookers, the temperatures are 180c/160C fan.
