Gluten Free Maple and Peanut Butter Teff Porridge

Teff is an ancient grain which is naturally gluten free, it is very popular in African cultures and very under rated elsewhere in the world. Teff has quite a rich almost nutty aroma and flakes make a fabulous porridge, if you can't tolerate oats this may be an alternative for you. Don't expect big flake as teff is the smallest grain in the world, meaning the flakes are tiny too! With the subtle sweetness of maple and some added peanut butter this is a delicious breakfast. Ingredients

110g Tobia Teffmeal Teff Flakes
750ml milk (to make dairy free/vegan we used Almond milk, regular semi skimmed milk will also work if you don't require dairy free)
1/2tsp ground cinnamon
70ml maple syrup
4tbsp peanut butter
  • Preparation Time: 5 Mins
  • Cooking Time: 10 Mins
  • This recipe makes 4 servings

Method

1. Place all ingredients except the peanut butter in a deep saucepan.

2. Place on a low heat and stir, keep stirring often until boiling. Don't leave without stirring too long otherwise it will burn onto the pan.

3. One boiling gently simmer, still stirring frequently until the teff porridge has thickened.

4. Serve into 4 bowls and top each with a tablespoon of peanut butter and a little drizzle of maple syrup if you like.
