What is better than gluten free pigs in blankets at Christmas? Stuffing full sized sausages with cheese, wrapping them in bacon and serving on a gluten free baguette with cranberry sauce! You need to try this one for Christmas, a hot dog combined with pig in blanket, what is not to love! If you need dairy free why not switch to a dairy free cheese that melts well and if it is to large for your appetite, half the recipe and either cut the Promise roll in half or use something like a Schar Ciabatta to make it a smaller size.

Gluten Free Jumbo Stuffed Pig in Blanket Hotdog

Ingredients

2 good quality gluten free pork sausages (or jazz it up with pork and apple ones)
40g wensleydale
2-3 rashers streaky bacon
1-2tbsp cranberry sauce
1 Promise Gluten Free Baguette

Method

  1. Leaving about half a centimetre at each end, cut the sausages lengthways, nearly all the way through, but you want the two halves still joined. Leaving a small amount at each end just helps stop the cheese spewing out.

  2. Slice your cheese and pressing to the middle of the sausages.

  3. Wrap streaky bacon around each sausage, just like with a min pig in blanket but bigger.

  4. Now to cook your sausages, I prefer to do mine in the air fryer - about 8-10 mins on 200c, but you can also oven bake. For oven I would preheat to gas mark 5/190c and bake for about 20 mins.

  5. While cooking, slice your baguette down the middle, I use Promise Baguettes but you could use Glutafin part baked or even use 2 Schar Ciabattas as alternatives. Spread cranberry sauce in the baguette then add your pigs in blankets!
