Naturally Gluten Free Tropical Prawn Quinoa

Quinoa is a naturally gluten free grain and is lovely with all kinds of things. Be sure to check your quinoa as in some supermarkets it has a may contain warning, my last lot was from Tesco which doesn't have a may contain and also check some health food shops too. I love quinoa with all sorts, it is a kind of cross between cous cous and rice is is incredible versatile, in this recipe, with fresh coriander, the tang of passion fruit and a hint of coconut it is a light lunch winner!

Ingredients

100g quinoa
500ml vegetable stock
60g cucumber
2 passion fruits
2tsp desiccated coconut
2 sprig fresh coriander
150g cooked prawns
  • Preparation Time: 10 Mins
  • Cooking Time: 10 Mins
  • This recipe makes 2 servings

Method

1. Place the quinoa in a pan and add the vegetable stock, cook on a medium heat until the quinoa "pops" and it looks like it has a ring around it, this is when it is cooked.

2. In a bowl place chopped cucumber, the flesh from the passion fruits, desiccated coconut and chopped coriander.

3. Drain any remaining stock off the quinoa and add the quinoa to the bowl with the cucumber etc. Mix through well.

4. Heat the prawns, make sure they are hot all the way through then add them to the quinoa and serve.
