Place the quinoa in a pan and add the vegetable stock, cook on a medium heat until the quinoa "pops" and it looks like it has a ring around it, this is when it is cooked.

In a bowl place chopped cucumber, the flesh from the passion fruits, desiccated coconut and chopped coriander.

Drain any remaining stock off the quinoa and add the quinoa to the bowl with the cucumber etc. Mix through well.

Heat the prawns, make sure they are hot all the way through then add them to the quinoa and serve.
