Gluten Free Pork in Apple Cider Sauce

Pork and apple is one of those matches you can't help but love. This pork dish is an easy dish to make in a sweet apple sauce which is naturally gluten free. It would make a great sunday lunch served with roasties and veg or it also makes a great mid week meal, whatever you prefer!

Ingredients

3 bramley apples
3tbsp sugar
2tbsp apple cider
2tbsp double cream
1tsp rosemary
1/2tsp salt
2tbsp water
400g pork fillet

  • This recipe makes 3 servings

Method

1. Core the bramley apples, place on a plate and put a tablespoon of sugar into the middle of each apple. Place in the microwave for about 5 minutes until soft.

2. Scoop out the flesh of the apples (and any sugar that has escaped) and place in a saucepan, the skins can be disregarded.

3. Add the cider, cream, rosemary, salt and water to the bramley apples, stir thoroughly and bring to the boil, leave to simmer for 5 minutes.

4. While waiting for the sauce, chop the pork into bitesize chunks and place in frying pan. Fry until browned on both sides. Once the sauce has simmered add to the pork and leave to simmer until the pork has cooked through. Serve with a selection of vegetables.
