Gluten Free Tuna and Cheese Lasagne

I'm not a fan of regular lasagne, I'm not the biggest fan of tomatoes to many peoples disbelief, so my mum always made me a gluten free tuna and cheese one and I loved it, layered with cheese sauce and tuna it's definitely a proper comfort food like regular lasagne but with a really cheesy white sauce and no tomatoes in sight.

Ingredients

50g butter/margarine
1 tbsp Gluten free plain flour
200ml milk
70g Mature cheese
2 Cans tuna in brine
Quarter bunch spring onions
2 and half Gluten free lasagne sheets
  • Preparation Time: 15 Mins
  • Cooking Time: 1 Hour 10 Mins
  • This recipe makes 2 Servings

Method

1. Melt the butter in a pan.

2. Add the flour and keep stirring until you get a stiff ball

3. Gradually add in the milk, make sure to keep stirring hard and fast to get out as many lumps as possible. If you find if you can't get them all out, run the sauce through a sieve.

4. Melt three quarters of the cheese into the sauce and remove from heat

5. Chop the onions and place in a bowl along with both tins of tuna

5. Place half the tuna mix in a lasagne or quiche dish, add a layer of lasagne sheets and on top of that half the sauce, repeat once more

6. Sprinkle the remaining cheese over the top, place in the oven on gas mark 5 for about an hour until lasagne is cooked.
