Gluten Free Spaghetti Alla Carbonara

Not quite the same as regular carbonara, it is still very creamy and indulgent but the sauce isn't the thick runny kind you come to expect with carbonara, it is more on the same level as thin scrambled egg, which is how it is suppose to be! Made with gluten free spaghetti and filled with bacon it is a great special occasion dish.

Ingredients

100g gluten free spaghetti
4 rashers bacon
120ml double cream
2 eggs
2 egg yolk
2tsp mixed herbs
50g cheese

Method

1. Place the pasta in a pan of boiling water and cook until soft, around 10 mins.

2. Meanwhile grill or fry the bacon until crispy and then cut into bitesize pieces.

3. Whisk together the cream, eggs, egg yolks and mixed herbs. Grate the cheese and then whisk into the egg mixture.

4. Drain the pasta and pour the egg mix into the pan, place the pan on a medium heat and allow the egg to cook, you should end up with a runny scrambled egg texture.
