Gluten Free Smoked Mackerel, Cherry and Almond Salad

Simple, naturally gluten free salad with a slight Asian twist. I wasn't sure if it would work but smoked mackerel actually does work well with cherries and almonds. I have also given it and a simple tamari soy sauce based drizzle for that extra bit of flavour. Perfect for a summers day lunch when cherries are super sweet, black cherries are the best for it but any type will work.

Ingredients

Handful spinach
2 radishes
4-5 slices cucumber
1 smoked mackerel fillet
75g black cherries
5g flaked almonds
1tsp honey
1tsp tamari sauce
1tsp lemon juice
  • Preparation Time: 5 Mins
  • Cooking Time: 2 Mins
  • This recipe makes 1 serving

Method

1. Place the spinach on a plate then slice the radishes and cucumber and place on top.

2. Warm the mackerel in the microwave for about 90 seconds (until hot all the way through).

3. While the mackerel is warming, cut the cherries in half and remove the pits, place the cherry halves on the salad.

4. Break up the mackerel into chunks and scatter over the top along with flaked almonds.

5. In a small pot or jug add the honey, tamari sauce and lemon juice and mix together then drizzle over the salad and serve!
