Gluten Free Sausage and Chickpea Salad

Who would have thought sausages would work so well on a salad. Diced up cooked sausages with chunks of salty Greek feta on a bed of gorgeous green salad with some added chickpeas. A great filling salad for any day of the week, you can eat it with cold sausages at work or hot at home and it is naturally gluten free.

Gluten Free Sausage and Chickpea Salad

Ingredients

4 sausages (whichever gluten free sausage you prefer, we used Aldi Skinny Pork)
60g mixed Leaves or baby spinach
Half a cucumber
Half a red onion
1 mango
80g canned chickpeas
Juice from 1/2 a lemon
2tsp smoked paprika
40g pomegranate seeds
60g feta

Method

  1. Fry or grill the sausages until cooked through and nice and brown, while cooking prepare the rest of the salad.

  2. Place mixed leaves or spinach on a plate, cut the cucumber into chunks and the onion into slices and scatter over leaves. Either slice or dice the mango and add that too.

  3. Place the chickpeas, lemon and paprika in a frying pan and heat for a few minutes to warm through, add to the top of the salad along, when the sausages are done, chop these up and add too.

  4. Break the feta into chunks and scatter over the top along with the pomegranate seeds.
