Fry or grill the sausages until cooked through and nice and brown, while cooking prepare the rest of the salad.

Place mixed leaves or spinach on a plate, cut the cucumber into chunks and the onion into slices and scatter over leaves. Either slice or dice the mango and add that too.

Place the chickpeas, lemon and paprika in a frying pan and heat for a few minutes to warm through, add to the top of the salad along, when the sausages are done, chop these up and add too.

Break the feta into chunks and scatter over the top along with the pomegranate seeds.
