Gluten Free Rocky Road Crispy Cakes

Crispy cakes have to be one of the most popular and easiest things to make with, and for, the kids. It's always great to get them involved the kitchen and these are a great start. These simple gluten free cornflake cakes have a rocky road twist to add a different dimension to your chocolatey crispy treats, you could add whatever gluten free extras you like too - how about peanuts, other dried fruits or fudge pieces.

Ingredients

120g dairy free chocolate
30g gluten free cornflakes
2 gluten free digestive biscuits
20g mini marshmallows
30g sultanas
  • Preparation Time: 15 Mins
  • Cooking Time: 30 Mins
  • This recipe makes 5 cakes

Method

1. Melt chocolate in a bowl over a pan of boiling water.

2. Crush the biscuits then add these along with the cornflakes, marshmallows and sultanas to the chocolate and mix well until thoroughly coated with chocolate.

3. Place a good spoonful of the mix into paper cakes and chill in the fridge for around half an hour until the chocolate has set.

This recipe could be Vegan if you get Vegan marshmallows.
