Gluten Free Peanut Butter Cookies

There is nothing better than a biscuit recipe that is uses minimal ingredients and lets face it, you can't go much less than three! You can whip this cookies up in no time if you want a quick biscuit fix as long as you have peanut butter, eggs and sugar in the house. Great to make with the kiddies, plus they are naturally gluten and dairy free.

Gluten Free Peanut Butter Cookies

Ingredients

200g crunchy peanut butter
175g sugar
1 large egg

Method

  1. Beat all the ingredients together in a bowl until well combined.

  2. Place tablespoon fulls of the mix onto a greased baking tray about an inch apart and flatten each with a spoon or fork.

  3. Heat oven to gas mark 4/180c and bake for 10 mins until golden brown.

You could also add dark chocolate chunks or melting it on top for that extra naughtiness.

Nothing about recipe Just need to mention after a trip to Albufeira Portugal about a gluten free pizza I had which was the best pizza I have ever had, being 60 and gluten free for 10 years it was amazing ! I even brought one home. Senior Frogs was on the strip which is the best known street for drunks late at night and early hours till 6am !
