Mash the bananas with a potato masher and then add in the egg, sugar, vanilla, cinnamon and nutmeg and mix well.

Add in the plain flour and the baking powder and mix, if the mixture is really thick add in the milk, if not you can skip the milk.

Heat a large frying pan and pour in some of the mixture into two fairly circular rounds, allow to cook on one side for 3 or 4 mins until golden and then flip over and cook for another 3 or 4 minutes. The fritters will take on an almost cake like texture in the middle.

Repeat step 3 with the rest of the mixture, you should get around 6 American style pancake size pancakes
