Gluten Free Crispy Cod Fingers

Fish fingers are so much better when they are homemade with proper fresh cuts of fish rather than reformed frozen ones. You give a nice crispy coating, using gluten free cornflakes is the really simple solution, they don't have to be used just as a breakfast cereal, they make great coatings instead of breadcrumbs or batter.

Gluten Free Crispy Cod Fingers

Method

  1. Cut the cod into 6 fingers.

  2. Beat the egg in a bowl and set aside while you lightly crush the cornflakes in a bag

using a rolling pin or meat tenderiser, once crushed place in another bowl.

  1. Roll the fish fingers in the egg and then in the cornflakes until well covered, place on a greased baking tray, repeat for all the finger.

  2. Place the fingers in the oven for 15-20 mins on gas mark 4/180c until the fish is cooked through.

You could but I am not sure of best way, you would need something for the coating to stick to the fish, maybe egg replacer may work, or even just using milk.
