Gluten Free Cheese Crusted Chicken

Beautiful crusted chicken with a gorgeous cheese and herb flavour. Gluten free bread works great as breadcrumbs as they are already pretty dry, they just need blitzing up and you have a lovely firm breadcrumb perfect for crusting pretty much anything, add some other flavours into the mix and you can make some stunning meals.

Ingredients

2 chicken fillets
2 slices gluten free bread (preferably white)
80g cheddar cheese
2 tbsp creme fraiche
2tsp oregano
1tsp black pepper
  • Preparation Time: 10 Mins
  • Cooking Time: 25 Mins
  • This recipe makes 2 servings

Method

1. Lightly toast bread and then break into crumbs, don't make them to fine, they are OK in mid size pieces.

2. Mix half of the cheese, créme fraiche, oregano, pepper and bread crumbs together, cut the chicken about 3/4 of the way through, and put remaining cheese in the split.

3. Spread crumb topping on top of the chicken place on a baking tray and cook in the oven on gas mark 7 for 20-25 mins until the chicken is cooked though. Serve with potatoes, veg or salad.
