Gluten Free Cajun Feta and Bean Burgers

If you are vegetarian or fancy a meat free burger these gluten free cajun feta and bean burgers maybe the thing for you! The feta gives a beautiful salty flavour to the burger and with the added cajun spice they really pack a punch. They are lovely just served with salad or you could serve in a gluten free bun!

Ingredients

150g canned mixed beans
150g canned chickpeas
1tsp chopped chilli
2 spring onions
1/2tbsp cajun spice
1tsp coriander leaf
30g gluten free breadcrumbs
90g feta cheese
1 egg

Method

1. Place the beans and chickpeas in a bowl and lightly mash with a potato masher, you want some chunky bits though so don't overdo it.

2. Add chopped chillis, diced spring onion, cajun, coriander and breadcrumbs and stir well.

3. Crumble the feta into smallish chunks and add to the bean mix along with the egg, stir though, evenly distributing the feta.

4. Divide the mix into 4 and gently form each into burgers, press together well to ensure the burgers don't fall apart.

5. Heat a frying pan and place the burgers into the pan (use a little oil if you like, I dry fried in a none stick pan), fry for 2-3 mins on each side they will go a nice dark brown but don't let them burn, the feta will just start to melt and the beans should be fully heat through. Serve with with our without a bun!
