Gluten Free Buckwheat Pancakes

Buckwheat is naturally gluten free despite the name and they make incredible pancakes. Buckwheat has an almost bitter taste and when paired with honey or maple syrup as a topping they are like a match made in heaven. Buckwheat it popular for making French savoury pancakes but works for sweet or savoury.

Ingredients

125g buckwheat flour
1 egg
3 or 4 tbsp sweetener
200ml light soya milk
  • Preparation Time: 10 Mins
  • Cooking Time: 15 Mins
  • This recipe makes 12 Pancakes

Method

1.Mix together the flour and sweetener.

2.Make a well in the bottom and beat in the egg

3. Gradually add in the milk and beat until smooth.

4.Using either an egg frying pan (the small ones that cook one egg at a time) or a metal cookie cutter in a frying pan, pour in small amounts of the mixture to make small pancakes. Fry for a few minutes on each side.
