Gluten Free Bread (with Breadmaker)

Bread is so difficult to master gluten free, the flours aren't as stable as wheat flour so getting a good rise and texture can be a bit hit and miss until you hit the right combination. Easiest way to make gluten free bread is use a bread maker, and this recipe is perfect for just that method of baking! You can make this on a regular bread setting but if you have a one with a gluten free bread setting that is even better as gluten free bread doesn't need the same kneading as regular bread.

Gluten Free Bread (with Breadmaker)

Ingredients

300ml milk (dairy free milks work fine too)
1tsp apple cider vinegar
2tbsp vegetable oil
2 eggs
350g gluten free strong white bread flour
1tsp salt
1tsp sugar
1x 7g sachet dry yeast

Method

This recipe is for a bread maker only

  1. Beat together the milk (room temperature not fridge cold), cider vinegar, oil and eggs in a jug and pour into the bread maker pan.

  2. Sift together the flour, salt and sugar and pour on top of the wet ingredients.

  3. Sprinkle the yeast on the top and close the lid.

  4. Set to gluten free bread setting and set crust colour to dark and let it do it's thing! (My Panasonic took 1 hour 55 to complete it's cycle)

  5. Once cooked remove from the machine, remember to remove the blade from the centre of the bread if it gets stuck - unfortunately you will always have a whole in the bottom from this. Allow to cool slightly before slicing.

NB: for dairy free, I find soya milk works really well but any dairy free milk will work fine. Also my breadmaker is a Panasonic SDR2530 but majority if breadmakers have a gluten free function.

Could you use this mixture for making burgers buns or do you have another one especially for that please?

The recipe would be too runny for buns as it needs to be more liquid in the bread maker. I do have an oven recipe for bread that could be used for buns :)
Sounds good ... but how about a recipe for wholemeal bread?

Technically you can't make wholemeal gluten free bread as it is made from whole grains of wheat. Sorry, technicalities! You can of course use other grains but it isn't traditional wholemeal. To do a brown bread you can use a combination of teff, oats and flax with a rice flour blend...a bit more complicated... or Doves do a gluten free brown bread flour which you can just substitute into this recipe :)
My small tesco doesn't ever have STRONG bread flour. Only plain and SR flour. Help

Same problem here, plain bread flour will work with some bread recipes, not tried it on this one though
Can you use normal milk (skimmed)? or does it only work with Soya milk? thank you
