Gluten Free Apple and Hazelnut Loaf Cake

A good loaf cake is just perfect after dinner or served with tea in the afternoon. This loaf cake is sweet and filled with fleshy apples an crunchy hazelnut pieces. Not only is it gluten free but it is also dairy free (but can be made not dairy free if preferred).

Ingredients

215g gluten free self raising flour
160g brown sugar
200g dairy free spread
40g chopped hazelnuts
3 eggs
75ml hazelnut milk
1 chopped apple

Method

1. Place everything except the hazelnut milk and apple in a bowl. Use an electric whisk to mix until stiff.

2. Add the hazelnut milk and whisk again, you should get a slightly loosened but still thick mix.

3. Remove the core from the apple (any apple will do, we used Pink Lady) and chop into small chunks, no need to peel. Add into the cake mixture and stir through.

4. Grease and line a 2lb loaf tin then spoon the mix into the tin. Bake on gas mark 5 for 50-60 mins until a skewer pushed into the middle comes out clean.
