Place everything except the hazelnut milk and apple in a bowl. Use an electric whisk to mix until stiff.

Add the hazelnut milk and whisk again, you should get a slightly loosened but still thick mix.

Remove the core from the apple (any apple will do, we used Pink Lady) and chop into small chunks, no need to peel. Add into the cake mixture and stir through.

Grease and line a 2lb loaf tin then spoon the mix into the tin. Bake on gas mark 5/190c for 50-60 mins until a skewer pushed into the middle comes out clean.
