Gluten Free Curry Quinoa

Curried quinoa works as a fabulous side dish to anything, you can't have to have it just plain. Quinoa is a naturally gluten free grain which is a great alternative to couscous or rice, when cooked in stock and with spices it has a fantastic flavour too it which goes with with practically anything.

Ingredients

800ml beef stock
240g quinoa
1 tbsp medium curry powder
1tbsp chilli powder
  • Preparation Time: 5 Mins
  • Cooking Time: 10 Mins
  • This recipe makes 4 servings

Method

1. Boil water and make up stock once boiled.

2. Add the quinoa to a pan and pour in the stock and add the curry and chilli powders, put on a low/simmer heat and allow the quinoa to absorb all of the stock, the quinoa is done once it has "popped" (goes from a hard ball to a ball that looks like it has split open). If all the stock absorbed before it "pops" add a little more boiling water.

NB: You can serve this either hot or cold. Makes a good replacement for rice or you can eat it as its own as a snack or for lunch.
