Gluten Free Courgette and Broccoli Soup

Many soups are naturally gluten free and this one is no different and certainly a firm favourite in our house. Soups are so easy to make and perfect for those cold winter days. This recipe calls for courgette, onion, broccoli and potato to make a beautiful thick and creamy soup perfect for those bitter cold evenings.

Ingredients

2 courgettes
1 bunch broccoli
1 onion or 1 leek
1 medium potato
1.5 pint vegetable stock
2tsps mixed herbs
Salt and pepper
  • Preparation Time: 10 Mins
  • Cooking Time: 30 Mins
  • This recipe makes 6 servings

Method

1. Roughly chop the courgettes, onion/leek, broccoli and potato and place in a large saucepan.

2. Make up the vegetable stock and pour over the vegetables, add the herbs and give a stir.

3. Put the saucepan on a medium heat and allow all the vegetables to cook through for about 30 minutes or until all the vegetables are tender.

4. Once cooked place in a food processor and blend thoroughly, add salt and pepper to taste. Serve immediately or allow to cool and place in freezeable containers if you wish you freeze it.

OR to make is soup maker

1. Chop all the veg and place in soup maker (depending on the size of you soup maker you may have to do two batches of half the amount)

2. Add in the stock, herbs and seasoning.

3. Set to smooth and leave it to do it's thing! Again serve immediately or freeze in portions.

Swirl on a little cream or yogurt if you like before serving!
