1 onion or 1 leek
1 medium potato
1 pint vegetable stock

1. Roughly chop the courgettes, onion/leek, broccoli and potato and place in a large saucepan.
2. Make up one pint of vegetable stock and pour over the vegetables, add the herbs and give a stir.
3. Put the saucepan on a medium heat and allow all the vegetables to cook through for about 30 minutes or until all the vegetables are tender.
4. Once cooked place in a food processor and blend thoroughly. Serve immediately or allow to cool and place in freezable containers if you wish you freeze it.
