1. Lightly toast bread and then break into crumbs, don't make them to fine, they are OK in mid size pieces.
2. Mix half of the cheese, créme fraiche, oregano, pepper and bread crumbs together, cut the chicken about 3/4 of the way through, and put remaining cheese in the split.
3. Spread crumb topping on top of the chicken place on a baking tray and cook in the oven on gas mark 7 for 20-25 mins until the chicken is cooked though. Serve with potatoes, veg or salad.
