Gluten Free Cheese and Onion Potato Cakes

So after a question on social media I thought I would do a "leftovers" recipe collection, basically tell me a few left over items you have and I will come up with a recipe. Lisa kindly gave the ingredients, potato, onion and some cheese...so here we have gluten free cheese and onion potato cakes!

Ingredients

1 large potato
1 small onion
1tsp milk
1tbsp gluten free plain flour
1/2tsp basil
40g cheddar
  • Preparation Time: 5 Mins
  • Cooking Time: 25 Mins
  • This recipe makes 2 potato cakes

Method

1. Peel and chop the potatoes and place in a pan. Finely dice the onion and add this to the pan too.

2. Cover the potatoes and onion with water and place on a hob on a medium heat, cook until the potatoes are soft.

3. Drain the water off the potato and onion and add the milk, flour and basil, mash until fairly smooth (it won't go completely smooth because of the onion)

4. Heat a frying pan and place about two to three tablespoons of potato in a circlish shape in the frying pan, press down until quite thin. Add half the cheese onto the middle of the round then top with another two or three tablespoons of mash and press down. Fry for about 2-3 mins and then flip over, and fry for another 3-4 mins until nicely browned. Repeat to make your second potato cake.
