125g buckwheat flour
1 egg
3 or 4 tbsp sweetener
200ml light soya milk

Method
1.Mix together the flour and sweetener.
2.Make a well in the bottom and beat in the egg
3. Gradually add in the milk and beat until smooth.
4.Using either an egg frying pan (the small ones that cook one egg at a time) or a metal cookie cutter in a frying pan, pour in small amounts of the mixture to make small pancakes. Fry for a few minutes on each side.
